Located on the edge of the village of Gevrey-Chambertin, at the foot of the legendary Clos Saint-Jacques, Sylvie Esmonin has cultivated seven hectares under her own name since 1988. A passionate vigneron, she spends most of her time in the vines. The domaine has followed biodynamic principles for over 20 years and is fully organic. Grapes are de-stemmed, crushed, and fermented in open wooden vats before going into barrel for malolactic fermentation and ageing. Barrels are of various ages to accommodate different cuvées, with only Clos Saint-Jacques using a higher proportion of new oak. Only gravity pumping is used, and the wines are bottled without fining or filtration.
